Avocado, kale, and broccoli come together beautifully in this vibrant green soup. Serve with sautéed kale and parmesan cheese.
Ingredients
- - 1 yellow onion
- - 5.3 oz fresh kale
- - Olive oil for sautéing
- - 1.1 lb broccoli
- - Approx. 10 cups vegetable broth
- - 2 avocados
- - 2 tbsp finely chopped mint
- - Salt
- For serving:
- - Sautéed kale
- - Shaved parmesan
Instructions
- Peel and chop the onion. Separate the kale leaves from the stems, discarding the stems. Sauté the onion and kale in olive oil in a pan until soft and glossy. Sauté in batches and set aside as you go. Season with salt.
