  • 7 oz boneless salmon fillet with skin
  • 1/2 tsp salt
  • 1 pinch of pepper

    Put in the oven for about 12 minutes.
  3. Peel and finely slice the parsnip and beetroot.
    Bring lightly salted water to a boil in 2 saucepans. Add the sliced parsnip and beetroot to cook separately (otherwise everything will turn red) for 1/2 minute.
  4. Finely slice the bell pepper.
  5. Mix the bell pepper with the boiled root vegetables and spinach or salad.
  6. Serve the salmon with the vegetables and a baked potato with a dollop of light Philadelphia cheese.

Notes

The baking time for the salmon is approximately 12 minutes, which can be done while you are preparing the vegetables. The baked potatoes can be prepared in advance or simultaneously with the salmon, depending on the method used (oven, microwave, or pre-baked).
