Creamy Spinach Soup with Cured Salmon Salad and Boiled Eggs
There's something special about spinach soup; it's smooth and delicate in a way that I like. Here, I serve it with a salmon salad and boiled egg halves.
Ingredients
- 1/2 yellow onion
- olive oil for frying
- 1 lb frozen spinach leaves
- 2 1/2 - 3 cups vegetable broth
- 1/2 cup heavy cream
- salt
- SALMON SALAD:
- 3.5 oz cured salmon
- 1/4 cup finely chopped pickles
- 1 tbsp Swedish mustard
- 1/2 cup crème fraiche
- salt and pepper
Instructions
- Chop the onion and fry it in olive oil in a pot. Let the onion become soft and translucent. Add spinach leaves and vegetable broth.
- Let the soup simmer for 5 minutes.
- Add heavy cream. Season with salt.
- Cut the salmon into small pieces.
- Mix salmon, pickles, mustard, crème fraiche, salt, and pepper into a salad in a bowl.
Notes
Serve the soup with the salmon salad, egg halves, and finely chopped chives.4
