Not only is it Victoria Day weekend, but it is also my first Saturday of summer holiday, so I am celebrating with some nationalist popsicles!
Of course, I could not simply make them with apples; they had to be toasted fruit.
I am starting to believe I have a thing for cooking berries. (This is a forewarning that there will be more grilled fruit dishes this summer—I am not apologetic.)
Grilled Cabernet Strawberries as an ice cream topping, then Grilled Balsamic Strawberry Frozen Yogurt, and now popsicles! I cooked strawberries and blueberries this occasion.
The fruit’s fluids are released as roasted, leaving the delectable berries in a sticky, gooey pool of bliss.
You do not even need to add flavor; just let them dazzle! And the scent that permeates the kitchen is incredible. You will need to roast every grape.
These popsicles are simple to prepare! All they need is roasted fruit and Greek yogurt.
You may also omit the roasting step if you choose. But I’m sure you will not since it is so lovely! Do it, and believe me when I say so.
Another plus is that these popsicles only have four ingredients and no extra sugar! You could have them for the morning without feeling bad—just a thought.

Ingredients
- Vanilla Greek yogurt, 18 oz.
- 1.5 cup fresh blueberries
- 1.5 cup fresh strawberries
- one lemon’s juice
- Guidelines
Wash the berries. Strawberries should be hulled, chopped into tiny bits, and dispersed in the blueberries and strawberry clumps in 2 separate 10×10 pans.
Squeeze lemon slices over each pan and stir to coat the fruit and vegetables uniformly with white vinegar.
Bake at 425 degrees Fahrenheit for about 25 minutes, or until the fruits have flattened and the juice has drained out.
Remove from the heat and set aside to cool. Once the fruit has cooled, combine it with the vanilla greek yogurt in a large mixing dish.
Fold the berries into the yogurt gradually, being careful not to overmix and lose the color swirls.
Scoop into popsicle cones and freeze for at least 6 hours, as per the manufacturer’s recommendations.

Summertime, in my perspective, does not begin until you prepare the first frozen treat of the weather!
I did like to think that I had the energy and time to whip out the ice cream machine once a week all through the summertime.
I do not think so. Handcrafted ice cream is delicious, but it takes a lot of time and effort.
Popsicles are my absolute fave! It is always a simple way to appreciate the springtime and its lovely, fresh gifts.
I also like that if you use clever ingredients, you can produce popsicles that will appeal to almost everyone at your party, regardless of their eating style or inclinations.
There’s no need for an ice cream machine or anything else but popsicle molds, which you can skip entirely; pour these into plastic cups, add a popsicle stick, and call it a day. Simple!
