Mint Chocolate-Molten Lava Cakes Recipe

I have had a love affair with mint chocolate-molten lava cakes from when I was a child, learning how to cook with my grandma.

I am now passing on my affection for this delicious treat to my children, who also love to eat what they produce.

Equipment needed for mint chocolate-molten lava cakes

You will need the items shown below when making the mint chocolate-molten lava cakes, if a microwave is not available you can melt the ingredients in a pan on a hotplate.
  • Oven, pre-heated to 425f or Gas mark7
  • Microwave oven
  • Microwave safe bowl
  • Whisk
  • 4 ramekins
  • 4 small plates

Ingredients needed for mint chocolate-molten lava cakes

The ingredients I use for the recipe are shown below, you will need an extra little butter and icing sugar during the process.

  • 4 oz. of Baking Chocolate
  • 1/2 cup of butter
  • 1 cup of icing(powdered)sugar
  • 2 eggs
  • 2 egg yolks
  • 6 tablespoons of all-purpose flour
  • 1/4 teaspoon of Peppermint extract
  • Chocolate chip mint ice cream

How to make mint chocolate-molten lava cakes

I like to place the chocolate and butter in a microwave-safe bowl and heat for half a minute, I then whisk the contents and repeat the process until the chocolate and butter are mixed to a smooth, brown consistency.

Next, I add the peppermint extract as desired (this may be left out as the mint ice cream will add a minty flavor when served, but my kids and I really like a strong, minty cake.

At this point, it is time to add the icing sugar to the mixture and stir it in.

Add the two eggs and the egg yolks, you should be careful to whisk until all are fully integrated.

Finally, add the flour and stir to create the cake batter.

Use a little extra butter to grease the ramekins and evenly fill them with the batter.

Place the ramekins in the hot oven and leave for around a quarter of an hour. (The edges of the cake should be firm but the center should remain soft to the touch).

When ready, remove the ramekins from the oven and allow them to cool for around a minute or so before transferring the cakes onto plates.

To finish, add a scoop of the chocolate-chip mint ice cream to each plate and dust with a little icing sugar for presentation.
