No-bake cooking is a fabulously easy way to create a quick & delicious treat or dessert, especially in the summer when it’s just too hot to heat up the kitchen.

I love making quick and easy no-bake recipes. They come together so quickly, perhaps with a bit of stove-top cooking.
But there’s no need to use an oven – making it perfect for those hot summer months. The most you might need is to include a little time for your recipe to sit in the refrigerator (and that’s really no work at all!).
These recipes include some great healthy options. I like to cut back on sugar and white flour as much as possible, so most of these desserts are sugar-free (I use xylitol and stevia for most of my sweetener needs).
It’s a bit trickier to replace white flour but I’m learning to use different nut flours and other replacements.

No-Bake Breakfast Cheesecake
First things first, you need to make a no-bake pie crust. Mix almond flour, melted butter, xylitol, and a pinch of salt together and sprinkle into small mason jars.
Blend strawberries with cottage cheese until smooth, then add xylitol and vanilla to taste. If you wish, add stevia at this point for sweetness. Now add gelatine to a ¼ cup of warm water and stir until it is dissolved.
Add this to the blended mixture and blend well. Pour the resulting mixture on top of the pie crust mixture in the mason jars, place the lids on, and refrigerate overnight for a truly delicious breakfast.

Easy No-Bake Energy Bites
These delicious small bundles of energy are super-simple to make, and rely on only three base ingredients: oatmeal, nut butter, and honey. To this you can choose to add a bulking ingredient, such as protein powder, flaxseeds, chia seeds, or a mix of whichever you prefer.
Simply mix the oatmeal, nut butter, and honey in a mixing bowl, closely followed by your bulking ingredient(s). If you want to add something to sweeten them, such as chocolate drops or vanilla, now is the time to do so.
Mix it all together, into a large ball shape, then refrigerate for around two hours. Remove, and split the mixture into small amounts that can be rolled into ball shapes. Either eat straight away or store in a container until you are hungry.

Sweet No-Bake Treats & Desserts
Just because you are making no-bake treats doesn’t mean they can’t hit the sweet tooth spot. Everyone deserves a special sweet treat from once in a while so why not whip up some of these to spoil yourself with?
These treats, candies & desserts are not sugar-free (but they are yummy!)
There is nothing quite like fudge to bring back memories of holidays by the sea. Luckily for us, it is simple to make at home. To start, add brown sugar to melted butter and microwave for two minutes.
Stir until it starts to thicken, then add milk and vanilla, making sure to mix it well. Add in some powdered sugar and stir until no lumps remain. If you wish, mix in some chopped nuts, then spread the mixture across a greased square pan before refrigerating for at least an hour.
Once ready, cut into squares, and savour the enjoyment of a seaside staple in your own home.

Baking and cooking with kids, especially younger children can be a little more challenging as you worry about them being near the hot stove or oven.
That’s why I love no bake sweets and treats as they are perfect for making with kids but you don’t have to miss out on any of the goodness of creating something sweet.

Who doesn’t love cooking and baking at Christmas time? I love creating homemade sweet gifts to give to friends and family and so do the kids. It is something we enjoy coming together to create so its super fun to find festive themed treats.
Even better that they are no-bake so we can leave the oven off and let the kids really enjoy being creative in the kitchen. These are all kids friendly so there isn’t anything they can’t quite do themselves.

Valentine’s Day Rice Krispie Treats
These simple treats are fun for all the family to make. All you need is Rice Krispies (other baked rice cereals will also work), marshmallows, butter, and cookie cutters.
Start by melting butter in a medium sized pot, and add marshmallows to combine the two. Keep on stirring until the marshmallows have melted, remove from the heat, and add the Rice Krispies, stirring well. Pour the mixture on to a lined cookie sheet (or tray) and press the mixture until it is roughly ¾ inch thick.
Allow it to cool, then cut out delightful shapes with your cookie cutters. Dip the treats in melted chocolate, covering either half or all of the shape, and decorate with sprinkles. Let them sit at room temperature until they harden, then either serve or store.
