All of my fondest memories of visiting my grandmother involve the smell of freshly baked bread. While I will never be able to make bread as good as her, my recipes are getting closer and closer.
Here is my recipe for her amazing Coconut Zucchini Bread.
Equipment Needed For Coconut Zucchini Bread Recipe
- A preheated oven
- 2 greased loaf pans
- 2 large mixing bowls
- An assortment of measuring cups and spoons
- Electric mixer
- Whisk
- Colander
- Spatula
Ingredients Needed For Coconut Zucchini Bread Recipe
- 3 cups of all-purpose flour
- 1 tablespoon of baking powder
- 1 teaspoon of baking soda
- 1/4 teaspoon of salt
- 1/2 cup of white sugar
- 1 and 1/2 cups of coconut flakes (unsweetened)
- 1/2 cup of coconut oil
- 2 cups of zucchini (grated)
- 1 teaspoon of vanilla extract
- 1 teaspoon of ground cinnamon
- 3 large eggs
Coconut Zucchini Bread Recipe
- Preheat your oven to 180 degrees C or 360 degrees F
- Combine the all-purpose flour, baking powder, baking soda, salt, and coconut flakes in the first mixing bowl
- Add the sugar, coconut oil, vanilla extract, and cinnamon to the second bowl
- Mix these thoroughly with the electric mixer until light and foamy
- Place your grated zucchini in the colander
- Squeeze the zucchini between your hands, and press it firmly into the base of the colander
- Remove as much of the liquid from the zucchini as possible. Otherwise your bread may turn out too soft and moist
- Add your zucchini into the bowl you mixed with the electric mixer
- Add the eggs and mix this again until everything is blended together
- Add this mixture to the dry ingredients in the first bowl
- Fold this new mixture with the spatula. Make sure to combine everything but do not over mix
- Grease your loaf pans with a little bit of unsalted butter
- Pour your mixture into the loaf pans and level them with the spatula
- Place the loaf pans into your preheated oven
- Bake for approximately one hour
- The actual baking time will depend on your oven, but try not to open the door too early
- Test if the bread is cooked by inserting a toothpick and checking if it comes out dry
- Allow the bread to cool inside the pan for 15 minutes
- Remove the bread from the pans and allow it to rest for another 10 minutes before cutting
