Coconut Zucchini Bread Recipe

  • Preheat your oven to 180 degrees C or 360 degrees F
  • Combine the all-purpose flour, baking powder, baking soda, salt, and coconut flakes in the first mixing bowl
  • Add the sugar, coconut oil, vanilla extract, and cinnamon to the second bowl
  • Mix these thoroughly with the electric mixer until light and foamy
  • Place your grated zucchini in the colander
  • Squeeze the zucchini between your hands, and press it firmly into the base of the colander
  • Remove as much of the liquid from the zucchini as possible. Otherwise your bread may turn out too soft and moist
  • Add your zucchini into the bowl you mixed with the electric mixer
  • Add the eggs and mix this again until everything is blended together
  • Add this mixture to the dry ingredients in the first bowl
  • Fold this new mixture with the spatula. Make sure to combine everything but do not over mix
  • Grease your loaf pans with a little bit of unsalted butter
  • Pour your mixture into the loaf pans and level them with the spatula
  • Place the loaf pans into your preheated oven
  • Bake for approximately one hour
  • The actual baking time will depend on your oven, but try not to open the door too early
  • Test if the bread is cooked by inserting a toothpick and checking if it comes out dry
  • Allow the bread to cool inside the pan for 15 minutes
  • Remove the bread from the pans and allow it to rest for another 10 minutes before cutting
