  • 1 cup all-purpose flour
  • ½ teaspoon salt
  • ¾ teaspoon pumpkin puree
  • 1 teaspoon cinnamon
  • A cup of light brown sugar
  • Baking soda
  • A cup of granulated sugar
  • ½ cup of milk {I prefer whole milk, but you can opt for any milk}
  • ¼ cup pumpkin pie
  • 2 eggs
  • vanilla extract
  • 2 spoons of vegetable oil

For the coating, you need;

  • Melted coconut oil {unsalted butter}
  • 2 tablespoons of ground cinnamon
  • 1 cup of sugar

  • Preheat your oven to 350 degrees
  • Lubricate the cooking pan with enough vegetable oil. Set the pan aside.
  • Then whisk all the dry ingredients in a medium bowl. Mix the wet ingredients in a different bowl, add pumpkin puree, and whisk them to attain a fine consistency.
  • Combine wet and dry ingredients until thoroughly combined.
  • Use a piping or Ziploc bag, then add batter and pipe the combination evenly into a greased pan.
  • Bake the doughnuts for 10-12 minutes. Press the doughnuts lightly with a spoon. If it springs back, then the doughnuts are perfectly done.
  • Allow the doughnuts to cool for 2-3 minutes before transferring them onto a cooling rack for extra cooling.
  • Melt the butter in a bowl after the doughnuts have cooled. Then mix cinnamon and sugar and set aside.
  • Take the doughnuts and dip them in melted butter; the doughnuts should be cold. Shake off the excess butter and roll the doughnuts on the sugar-cinnamon mixture. Repeat this procedure with all the doughnuts.
  • Place the doughnuts on a cooling rack and let them sit for a while. The doughnuts taste better when eaten the day they are prepared.
