Here’s an old favorite Chocolate Peanut Butter Cheesecake Cookies, a mouthful to say, and I wish they were more of a mouthful to eat!

I remember these tiny delicacies from Church Christmas Parties and buffets, when it came to the dessert course, these were often on the table.

Happy memories. Real party food. The recipe contains many ingredients but it’s fairly versatile as these cookie cups can be varied in taste and texture.

  • paper cake cases or small cake trays
  • oven trays
  • oil
  • mixing bowls
  • whisks, manual or electric

Ingredients needed for Chocolate Peanut Butter Cheesecake Cookie Cups

  • peanut butter 16g
  • condensed milk 1 can
  • 2 large free range eggs
  • vanilla extract 2 tsp
  • chocolate chips 1 cup
  • cream cheese 16 0z
  • pre-prepared cake or cookie batter mix
  • granulated sugar, 2 cups
  • salt – a small pinch
  • softened or spreadable butter half a cup
  • cream cheese 1 tbsp
  • cocoa powder 1 tbspn
  • chocolate chips
  • Icing – optional
  • cream as an alternative to condensed milk

Some of these ingredients are for the actual cup and some are for the filling, don’t get them mixed up. The filling ingredients would include cream cheese, condensed milk or cream, sugar, vanilla, chocolate chip, and icing options.

Chocolate Peanut Butter Cheesecake Cookie Cups Recipe

This is a fairly simple recipe. Mix the wet ingredients such as eggs, butter, vanilla extract, and condensed milk together.

Beat well so that everything is thoroughly mixed, and then fold in the solid ingredients and whisk the mixture up into a dough. If the dough is too stiff, add water.

Prepare the paper cases or oil the small cake tray spaces, and pre-heat the oven at 350F.

Prepare the dough in small balls, a few teaspoons, don’t overdo it as they expand while cooking and these cookie cups are only meant to be small.

Make sure the balls are firm and then gently push the back of a spoon into each one to make a cup. Cook for 10 minutes, be vigilant, and don’t overcook as they are easily ruined.

Leave the cups to cool. Don’t be tempted to put the filling in before they are properly cooled as this would ruin them and curdle the fillings.

Keep the fillings fairly even, don’t overload, especially if you’re adding icing and chocolate chips.

Make up the filling separately. cream cheese, peanut butter, butter, and cream, mix well and then mix in the sugar slowly and thoroughly.

Spoon the filling in carefully with a teaspoon and let it fill the cups.

The chocolate chips go on top of the filling and you can make up some icing as well as an optional extra.

The end result should smell and taste delicious and look great among your party snacks. They’ll go quickly.
