  • 4 free range large egg yolks
  • 200g dark chocolate, chopped
  • A pinch of salt
  • 2 free range egg whites
  • Extra chocolate, white or dark, grated for garnishing.

Step 1

Once you have all the equipment and ingredients ready, it’s time to make this dessert. Beat the cream until it is soft then set it aside.

Use a heat-proof bowl to beat the egg yolks and castor sugar for five minutes over a pot of simmering water using a whisk. Ensure that the mix is thick and appears glossy.

Chop a block of dark chocolate using a sharp knife into small pieces.

Using a heavy saucepan, apply butter over low heat, add the chopped dark chocolate, and stir carefully with a spatula until it melts.

Turn off the heat before all chocolate chips melt off and continue to stir until it is all smooth. You will notice that the butter will melt before the chocolate. Add a pinch of salt to the melted chocolate and let it cool.

Pour the egg whites into another bowl and use a balloon whisk to beat the bowl until it is stiff.

Add the cream into the egg white mixture, fold the chocolate and egg yolks in the white and cream mixture.

Pour your almost ready mousse into a large serving dish or several serving dishes and place them in the fridge to chill. If you decide to put it in a large bowl, it will take up to 4 hours to be ready. If it is in the small serving dishes, it will only last an hour. Give the mousse enough time in the fridge before serving.

After time has elapsed, your dark chocolate mousse is now reading for serving. For you to spice things up, add whipped cream when serving. Grate some dark or white chocolate over it then serve to your friends or family.
