Booze Soaked Cherry Tarts Recipe

This is a personal favorite as it brings back memories of Christmas with my family many years ago. This recipe requires cherries in brandy, you can buy them in a jar or make your own.

There is very little equipment required when making this delicious dish.

  • Large Mixing Bowl
  • 9 inch Tart Pan
  • Measuring Cups
  • Oven preheated to 350f

Ingredients required for booze soaked cherry tarts

Pastry

  • 125g. Flour
  • 55g. Sugar
  • 1/2 Teaspoon Salt
  • 110g. Cold Butter
  • 2 Egg Yolks

Filling

  • 10oz. Cherries in Brandy
  • 3 Eggs
  • 70g. Sugar
  • 3/4 cup/175 ml Creme Fraiche or Sour Cream
  • 1/2 Teaspoon Vanilla

Booze Soaked Cherry Tarts Recipe

To make the pastry place the flour, sugar, and salt into the mixing bowl.
Add the butter and then mix using the fingers to create a ‘crumb’ textured mixture.

Create a center ‘well’ in the mixture and add the 2 egg yolks.
Use fingers to mix the eggs and crumb the mixture together until it becomes a pastry.

Form into a circular shape before placing the pastry on plastic film and refrigerate for about a 1/4 of an hour.
Roll out the chilled pastry to a size that will fit in the 9-inch tart pan.

How to cook booze soaked cherry tarts

Prepare the filling by placing the brandied cherries into the pie.
Crack the eggs into a bowl, add the sugar, and beat them together.

Fold in the creme fraiche and the vanilla.
When fully mixed together, pour the filling over the cherries in the pie crust.

Place in the preheated oven for around 25 minutes or until the topping has set.
Remove from the oven and allow to cool prior to serving.

This recipe uses brandied cherries but it is possible to use cherries that have been soaked in other types of alcohol.

It is also possible to prepare your own alcohol-soaked cherries, but this can take around a month prior to their use so may not be practical for everyone.

Jars of alcohol-soaked cherries are available from good grocery suppliers.
