I always associate visiting my grandmother’s house with the aroma of freshly baked cakes. My favorite was always her Blueberry Almond with Coffee Cake. And finally, I have perfected my recipe and want to share it with you.
Equipment Needed For Blueberry Almond with Coffee Cake Recipe
- 2 mixing bowls
- Baking tin
- Measuring devices
- Whisk
- Spatula
- Oven
Ingredients Needed For Blueberry Almond with Coffee Cake
- 120g all-purpose flour
- 100g white sugar
- 30g brown sugar
- 1/4 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon almond extract
- 3/4 teaspoon vanilla extract
- 1/4 teaspoon almond extract
- 1/4 teaspoon ground cinnamon
- 1/2 cup buttermilk
- 15g melted butter
- 5g hard butter
- 2 eggs
- 1 cup of fresh blueberries
- 1/2 cup of almonds sliced
Blueberry Almond with Coffee Cake Recipe
- Preheat your oven to 175° C or 350° F
- Place the buttermilk, eggs, melted butter, and extracts into a bowl and whisk until blended
- Sift the flour into the second bowl
- Add the white sugar, baking soda, baking powder, and salt and combine thoroughly
- Pour the wet ingredients into the dry ingredients slowly. Keep mixing gently until they appear moist
- Do not stir the mixture too much and don’t worry if there are some clumps of dry mixture
- Add half of the blueberries to your mixture and blend it with the spatula
- Use the hard butter to grease your baking tin
- Gently pour the mixture into the baking tin and use the spatula to get it level
- Place the remaining blueberries on the top of the mixture. Try to keep them on the top and evenly dispersed
- Wash and dry the bowl you used for the wet ingredients
- Add the cinnamon, brown sugar, and almonds into the bowl and mix. Then add this on top as the final layer
- Place the tin in the pre-heated oven and bake for 30 minutes
- Remove the baking tin and allow it to rest on a wire rack for 15 minutes
- Slice with a serated knife and enjoy
