1. Cherry Filling

  • 2 cups pitted and halved sweet cherries
  • ¼ cup water
  • ¼ cup granulated sugar
  • 2 tablespoons cornstarch
  • 2 teaspoons lemon juice
  • ½ teaspoon vanilla extract

2. Chocolate Cupcakes

  • 1 cup all purpose flour
  • ¼ cup plus 2 tablespoons unsweetened cocoa powder
  • ¾ teaspoon baking powder
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • ½ granulated sugar
  • ½ brown sugar
  • 1/3 cup oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ½ cup buttermilk
  • ½ cup boiling water

3. Whipped Cream

  • 2 tablespoons water
  • 1 and ½ teaspoons unflavoured gelatin
  • 1 and ½ cups heavy whipping cream
  • 1/3 cup powdered sugar
  • 1 teaspoon vanilla extract

1. Step 1

Preheat your oven to 350 degrees. Using 18 liners, line two cupcake liners and place them aside for later use.

Using a stand mixer bowl thoroughly beat oil, butter, vanilla extract, melted chocolate, and sugars until the mixture is smooth. Gradually add the eggs; one at a time while maintaining a low mixing speed.

Whisk flour, cocoa powder, baking soda, and salt in a bowl. While maintaining a low mixing speed, add all the dry ingredients together with the buttermilk and a small amount of warm water.

Mix thoroughly so that the mixture can even out. Give the batter five minutes to rest.

Once your five minutes are over, divide the batter equally among the cupcake cups, filling them 2/3 full.

Place them in the oven and bake for seventeen to twenty minutes. However, it would help if you were careful to avoid over-baking them.

Once they are ready, give them time to cool as you prepare the filling. Using a saucepan, add sugar, water, cherries, and cornstarch.

Use low heat to cook as you stir until the mixture thickens. Remove from heat and add in the vanilla extract as you stir. Give it time to cool off completely.

Use a paring knife or pancake corer to create a hole in the center of each cake. Add the cherry filling and spread skilfully on each cupcake.

7. Step 7

To garnish, you will use chocolate shavings and top it with either jarred or fresh cherries.
